  • 120 g gluten-free flour
  • 40 g ground almonds
  • 2 flaxseed eggs (2 tbsp ground flaxseeds + 6 tbsp water)
  • 360 g apples (peeled, cored, diced)
  • 150 g firm tofu
  • 100 g soaked cashews
  • 480 ml water
  • 85 g maple syrup
  • 20 g vegan butter or coconut oil

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. For the crust, mix gluten-free flour, ground almonds, flaxseed eggs, vegan butter, sugar, and salt in a bowl. Press into a greased baking pan.
  3. For the apple filling, simmer diced apples with water and lemon juice until soft. Add sugar and spices; thicken with cornstarch and let cool.
  4. Blend tofu, soaked cashews, coconut milk, maple syrup, lime juice, vanilla extract, and cornstarch until smooth for the cheesecake filling.
  5. Layer apple filling on the crust followed by the cheesecake mixture. Bake for about 45 minutes until set.
  6. Allow to cool completely before serving.
