  • 10 Tablespoons unsalted butter, softened to room temperature
  • 1/2 cup light brown sugar, packed
  • 3/4 cup granulated sugar, divided
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 ounce packet of hot chocolate mix
  • 3 Tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 120 mini vegan marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together softened butter, brown sugar, and half of the granulated sugar until fluffy. Beat in the egg and vanilla extract until combined.
  3. Mix in the flour, hot chocolate mix, cocoa powder, baking soda, and salt until just combined.
  4. Scoop out portions of dough and shape them around the mini marshmallows. Roll into balls and coat with remaining granulated sugar.
  5. Place on the prepared baking sheet and bake for 10-12 minutes until slightly cracked on top. Let cool before serving.
