Instructions

  1. Preheat oven to 375°F (190°C).
  2. Bake whole sweet potatoes on a baking sheet for 40-45 minutes until soft. Allow to cool.
  3. Peel, slice, and core apples; drizzle with lemon juice if necessary to prevent browning.
  4. Once cooled, peel and slice sweet potatoes into 1/2-inch thick rounds.
  5. In an 8×8 or 9×9 baking dish, layer apple slices and sweet potato slices alternately.
  6. In a small saucepan, melt honey, butter, cinnamon, and vanilla over low heat until combined.
  7. Pour the honey mixture over the layered fruits and vegetables; sprinkle with pecans if desired.
  8. Bake at 350°F (175°C) for 15-20 minutes until heated through.
