- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 large carrots, diced
- 2 celery stalks, diced
- 1 1/2 cups dried green or brown lentils, rinsed
- 3 medium potatoes, diced
- 1 can (14.5 oz) diced tomatoes
- 8 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and black pepper, to taste
- 2 cups fresh spinach or kale (optional)
- In a large pot, heat olive oil over medium heat. Sauté the onion, carrots, and celery for about 5 minutes until softened.
- Add minced garlic and cook for another minute until fragrant.
- Stir in lentils, diced potatoes, tomatoes (with juices), broth, and spices.
- Bring to a boil then reduce heat to low. Cover and simmer for 30-40 minutes until lentils and potatoes are tender.
- In the last 5 minutes of cooking, add spinach or kale if desired.
- Taste and adjust seasoning before serving hot.
