  • ¾ cup whole wheat or gluten-free flour
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp coconut oil or unsalted butter (melted)
  • 1 large egg (room temperature)
  • 1 tsp almond extract
  • ¼ cup pure maple syrup (room temperature)
  • 6 tbsp unsweetened vanilla almond milk (room temperature)
  • ½ cup diced peaches

Instructions

  1. In a medium bowl, whisk together the oats, flour, cinnamon, nutmeg, baking powder, and salt.
  2. In another bowl, combine melted coconut oil or butter with the egg and almond extract; stir in maple syrup and almond milk.
  3. Mix wet ingredients into dry until just combined. Gently fold in diced peaches.
  4. Chill the dough in the refrigerator for 30 minutes.
  5. Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
  6. Scoop rounded tablespoons of dough onto the baking sheet and flatten slightly.
  7. Bake for 9–12 minutes until lightly golden; cool on the pan for 10 minutes before transferring to a wire rack.
