  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ⅓ cup chocolate chips (plus extra for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or grease lightly.
  2. Squeeze excess moisture from the grated zucchini using a paper towel.
  3. In a large bowl, combine drained zucchini, eggs, avocado oil, maple syrup, vanilla extract, and applesauce; whisk until smooth.
  4. Add whole wheat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt; stir gently until just combined. Fold in chocolate chips.
  5. Divide batter into muffin tin compartments until three-quarters full; sprinkle additional chocolate chips on top if desired.
