  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 1/2 cup bell peppers, diced
  • 1 lb boneless skinless chicken breasts
  • 6 cups reduced-sodium chicken broth
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 2 tbsp lemon juice

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat until shimmering.
  2. Sauté onion, garlic, and ginger for about 3–4 minutes until fragrant.
  3. Add bell peppers and seasonings; cook for another 3 minutes.
  4. Stir in chicken breasts and chicken broth; bring to a simmer for about 20 minutes.
  5. Remove chicken, shred with forks, and return to the pot.
  6. Add broccoli and cauliflower; simmer for another 10 minutes until tender.
  7. Stir in lemon juice before serving warm.
