  • 2 tablespoons olive oil
  • 1 small yellow onion
  • 3 cups broccoli florets
  • 1 zucchini
  • 1 small yellow bell pepper
  • 1 small red bell pepper
  • Spices: garlic powder, onion powder, dried thyme, dried rosemary, paprika, chili powder
  • ¼ cup low sodium chicken broth

Instructions

  1. Cut chicken into 1-inch pieces and season with salt, pepper, and half the spice mix. Coat with olive oil.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook chicken for 6-8 minutes until browned; set aside.
  3. In the same skillet, add remaining olive oil and sauté onions for 2 minutes. Add broccoli, zucchini, and bell peppers; season with remaining spices.
  4. Cook vegetables for about 4-6 minutes until tender-crisp.
  5. Pour in chicken broth and return chicken to the skillet. Stir gently and cook until heated through.
