  2. Slice the zucchini into strips about ¼ inch thick for even cooking.
  3. Mix panko bread crumbs, plain bread crumbs, grated Parmesan cheese, and remaining salt in another bowl. Dip each zucchini strip into the egg mixture first, then coat with the breadcrumb mixture.
  4. Spray the air fryer basket with cooking spray. Arrange zucchini fries in a single layer and lightly spray tops and sides.
  5. Air fry at 400°F for about 8 minutes or until golden brown and crispy, shaking halfway through for even cooking.
