  • 34 garlic cloves
  • 2 tablespoons olive oil
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1/2 cup red lentils
  • 2 cups vegetable broth
  • 2 1/2 cups unsweetened almond milk (divided)

Instructions

  1. Preheat the oven to 425ºF.
  2. In a large mixing bowl, toss chopped cauliflower, shallots, garlic, olive oil, turmeric, cumin, and salt until coated.
  3. Spread evenly on a baking sheet and roast for 30 minutes, flipping halfway.
  4. Transfer roasted vegetables to a saucepan; add lentils, broth, and 2 cups almond milk. Bring to boil then simmer for 20 minutes.
  5. Blend until smooth; stir in remaining almond milk for desired creaminess.
