  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice-cold water
  • 2 cups pumpkin purée
  • 1 1/2 cups sliced cremini mushrooms
  • 1 1/2 teaspoons fresh sage, finely chopped
  • 1/4 cup heavy cream
  • Olive oil for sautéing

Instructions

  1. Prepare the crust by mixing flour and salt in a bowl. Cut in cold butter until crumbly, then add ice-cold water to form a dough. Chill for at least 20 minutes.
  2. Preheat oven to 375°F (190°C). Roll out the dough and fit it into a tart pan. Pre-bake for 12–15 minutes.
  3. Sauté mushrooms in olive oil until golden brown; set aside.
  4. In a bowl, whisk together pumpkin purée, heavy cream, sage, nutmeg, and black pepper. Fold in sautéed mushrooms.
  5. Fill the pre-baked crust with the mixture and bake for an additional 25–30 minutes until set.
  6. Allow to cool slightly before slicing and serving.
