  • 1kg Baking Potatoes (peeled & diced)
  • 1 liter Chicken Stock
  • 3 tbsp Olive Oil
  • 23 Lemons (juiced)
  • 2 tsp Dried Oregano
  • 200g Feta Cheese
  • 100g Cream Cheese
  • 1 tsp Honey

Instructions

  1. Boil diced potatoes in chicken stock mixed with lemon juice until tender.
  2. Drain and steam dry the potatoes for about 10 minutes before roasting.
  3. Preheat oven to 390°F (200°C). Toss dried potatoes with olive oil, oregano, salt, pepper, and smashed garlic cloves on a baking tray.
  4. Roast for 40-45 minutes until golden brown and crispy, tossing halfway through.
  5. Blend feta cheese, cream cheese, olive oil, and honey in a food processor until smooth.
  6. Serve whipped feta at the base of a dish topped with roasted potatoes.
