  • 1 lb sirloin steak (cut into bite-sized pieces)
  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp Dijon mustard (optional)
  • 1 tsp paprika
  • 1 package (20 oz) cheese tortellini
  • ½ cup shredded mozzarella
  • 2 tbsp chopped parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Season steak with salt and pepper.
  2. In a skillet over medium-high heat, heat olive oil and sear steak for 2–3 minutes on each side. Remove from skillet.
  3. In the same skillet, melt butter and sauté minced garlic for 30 seconds. Stir in flour to make a roux; cook for one minute.
  4. Gradually whisk in milk and beef broth until smooth; stir in cheddar cheese until creamy.
  5. Cook tortellini according to package instructions but slightly undercook them. Drain and toss with olive oil.
  6. Grease a baking dish; combine tortellini, seared steak, and cheese sauce. Stir gently and top with mozzarella.
  7. Bake uncovered for 20–25 minutes until bubbly and golden.
