  • 1 cup brown sugar (packed)
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/3 cup molasses
  • 1/3 cup white sugar (or coarse sugar)
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup vegan marshmallows cream
  • 1/4 teaspoon salt
  • 11 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, ground ginger, cinnamon, ground nutmeg, ground cloves, baking soda, and salt. Whisk together until well combined.
  3. In another bowl, beat together unsalted butter and brown sugar until light and fluffy.
  4. Add egg, vanilla extract, and molasses to the creamed mixture, mixing well until fully incorporated.
  5. Gradually add the dry ingredients into the wet mixture, mixing until just combined; do not overmix.
  6. Scoop tablespoons of dough onto prepared baking sheets, spacing them about two inches apart.
  7. Bake for about 10 minutes or until edges are set but centers remain soft.
  8. While cookies cool, beat together softened unsalted butter, vegan marshmallows cream, and salt. Gradually add powdered sugar until desired consistency is reached, stirring in milk as needed.
  9. Once cookies have cooled completely, spread a generous amount of frosting on one cookie half and top with another cookie to create a sandwich.
