  • 1 tablespoon finely chopped parsley
  • 1 tablespoon olive oil (plus extra for drizzling)
  • ⅓ teaspoon dried oregano

Instructions

  1. Preheat your oven to 200°C / 390°F.
  2. Wash the zucchinis, slice them in half lengthwise, and scoop out the flesh to create space for stuffing.
  3. In a mixing bowl, combine feta cheese, Greek yogurt, spring onion, Gruyere cheese, lemon zest, garlic powder, parsley, olive oil, and oregano. Mix well.
  4. Spoon the filling into each zucchini half and drizzle with olive oil.
  5. Place in a baking dish and bake for about 45 minutes until tender and lightly browned.
