  • 4 medium zucchini (coarsely shredded)
  • ½ teaspoon salt
  • ½ cup all-purpose flour
  • 2 large eggs (beaten)
  • ⅓ cup shredded cheese (Cheddar or Parmesan)
  • 1 tablespoon chopped chives
  • salt & pepper (to taste)
  • olive oil (for frying)

Instructions

  1. Drain excess moisture from the zucchini by placing it in a colander, sprinkling with salt, and letting it sit for 10 minutes. Then squeeze out any remaining liquid using a clean tea towel.
  2. In a mixing bowl, combine flour, beaten eggs, shredded cheese, chopped chives, and salt and pepper. Stir until smooth.
  3. Add the prepared zucchini to the batter and mix well.
  4. Heat olive oil in a skillet over medium-high heat. Drop tablespoonfuls of batter into the skillet and gently flatten with the back of a spoon.
  5. Fry each fritter for about 2 minutes per side until golden brown.
