  • 3 cloves garlic (minced)
  • 1/4 cup diced onion
  • 1 large carrot (34 oz)
  • 2 tbsp tomato paste
  • 1/4 cup tomato sauce (optional)
  • 1 1/4 cups lentils (mixed varieties)
  • 12 oz potatoes (cut into bite-sized pieces)
  • 2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp thyme
  • 1/2 tsp oregano
  • 45 cups water

Instructions

  1. 1. Heat oil in a large pot over medium heat. Sauté diced onion for about a minute until translucent. Add minced garlic and chopped carrots; cook for another 2–3 minutes.
  2. 2. Stir in the tomato paste and optional tomato sauce; cook for about a minute. Add lentils and potatoes, followed by water, salt, black pepper, thyme, and oregano.
  3. 3. Bring the mixture to a boil. Reduce heat to medium-low and simmer uncovered for about 25–35 minutes until lentils are tender.
