  • 1 packet rapid rise/instant yeast (2 1/4 teaspoons)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup honey (or agave/maple syrup)
  • 3 egg whites
  • 1 teaspoon apple cider vinegar
  • 1 1/2 cups warm water (100-110°F)
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 350°F and spray a bread pan with gluten-free cooking spray.
  2. In a large bowl, combine the gluten-free flour, baking powder, and yeast.
  3. Add olive oil, honey (or alternative), apple cider vinegar, and warm water into the dry mix. Blend on low speed for about one minute.
  4. Incorporate egg whites and salt; mix on medium speed for another minute until thick.
  5. Pour the dough into the prepared pan. Cover with plastic wrap sprayed with cooking spray and let rise in a warm area for about 30 minutes.
  6. Bake in the preheated oven for about 30 minutes until golden brown and internal temperature reaches between 205-210ºF.
  7. Cool in the pan for ten minutes before transferring to a cooling rack.
