  • 1 pound spaghetti
  • 4 tablespoons butter
  • 4 cloves garlic
  • 3 cups whole milk
  • 8 ounces cream cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • Salt and freshly ground black pepper to taste
  • Optional: Red pepper flakes for extra heat

Instructions

  1. Cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. Season chicken pieces with Cajun seasoning and smoked paprika. In a large skillet, heat olive oil over medium-high heat and cook chicken until browned (6–8 minutes). Remove from skillet.
  3. In the same skillet, melt butter and sauté minced garlic for about 1 minute. Whisk in flour to create a roux for 1–2 minutes.
  4. Gradually add whole milk and chicken broth; whisk until smooth. Bring to a simmer before adding cream cheese and 1 cup of mozzarella, stirring until melted.
