  • 1 bell pepper (diced)
  • 2 cloves garlic (minced)
  • 2 lb ground beef
  • 4 tablespoons keto taco seasoning
  • 2 tablespoons tomato paste
  • 2 medium eggs
  • 1½ cups shredded cheese
  • ½ cup heavy whipping cream
  • Optional: 1 jalapeño (sliced)

Instructions

  1. Preheat your oven to 350°F (180°C). In a large skillet over high heat, sauté the diced onion, bell pepper, minced garlic, and ground beef until browned.
  2. Stir in the taco seasoning and tomato paste until well mixed. Transfer the mixture to a casserole pan.
  3. In a mixing bowl, whisk together the eggs, heavy cream, and half of the shredded cheese. Pour over the meat mixture in the casserole pan.
  4. Top with remaining cheese and optional jalapeño slices. Bake uncovered for 15–17 minutes or until bubbly. Let cool for about 5 minutes before serving.
