  • 2 large chicken breasts
  • 1 can black beans (drained and rinsed)
  • 1 can corn (undrained)
  • 10 ounces Rotel tomatoes with green chilis (undrained)
  • 1 packet ranch seasoning
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • ½ cup water
  • 8 ounces cream cheese

Instructions

  1. Spray the bottom of the slow cooker with nonstick cooking spray.
  2. Layer in the chicken breasts, followed by black beans, corn, Rotel tomatoes, ranch seasoning, ground cumin, chili powder, onion powder, and water. Mix well.
  3. Place the cream cheese block on top without mixing it in.
  4. Cover and cook on low for 6-8 hours or on high for 4 hours.
  5. Once cooked, shred the chicken using two forks and mix everything before serving hot.
