  • 4 tbsp unsalted butter, melted
  • 24 squares graham crackers
  • ¼ cup sugar
  • 2 egg yolks
  • 1 can (12 oz) sweetened condensed milk
  • ½ cup fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Butter and line an 8-inch square baking pan with parchment paper.
  3. In a food processor, pulse graham crackers into fine crumbs. Add sugar and melted butter; pulse until combined.
  4. Press the mixture firmly into the bottom of the prepared pan to form the crust. Bake for 10-12 minutes until lightly browned and cool completely.
  5. In a mixing bowl, whisk together sweetened condensed milk and egg yolks until smooth. Stir in fresh lemon juice.
  6. Pour the filling over the cooled crust and bake for an additional 15-20 minutes until set.
  7. Allow to cool completely before refrigerating for at least one hour before cutting into squares.
