  • 2 cups fresh blueberries
  • 1 cup butter (softened)
  • 8 oz cream cheese (softened)
  • 1 ½ cups sugar
  • 4 eggs
  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt

Instructions

  1. Preheat the oven to 350°F.
  2. Toss fresh blueberries with 2 tablespoons of flour in a bowl and set aside.
  3. In a large mixing bowl, cream together softened butter, cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, mixing well after each.
  4. In another bowl, combine remaining flour, baking powder, and salt. Gradually mix this into the wet ingredients until just combined.
  5. Fold in the floured blueberries gently using a rubber spatula.
  6. Pour the batter into two greased loaf pans (9” x 5”). Bake for about 45 minutes or until a toothpick comes out clean from the center.
  7. Allow cooling on a wire rack for about 10 minutes before removing from pans.
