  • 1 cup Ditalini pasta
  • 5 cloves garlic (minced)
  • 1 onion (diced)
  • 1 cup carrots (chopped)
  • 3 stalks celery (diced)
  • 1 lb Italian sausage (casings removed)
  • 15 oz red kidney beans (rinsed/drained)
  • 15 oz Great Northern Beans (drained/rinsed)
  • 2 tbsp olive oil
  • 3 cups chicken broth
  • 16 oz tomato sauce
  • 15 oz diced tomatoes
  • 1 tsp dried basil
  • 1/2 tsp Italian seasoning
  • salt/pepper (to taste)
  • 1 cup water

Instructions

  1. Boil water in a large pot. Cook Ditalini pasta according to package directions, drain, and set aside.
  2. Heat olive oil in a Dutch oven over medium heat. Add the Italian sausage and cook until browned; set aside.
  3. In the same pot, add garlic, onion, carrots, and celery. Sauté for about 3-4 minutes until tender.
  4. Pour in chicken broth, tomato sauce, diced tomatoes, dried basil, salt/pepper, Italian seasoning, cooked sausage, and water. Bring to a boil.
  5. Reduce heat and simmer for about 15 minutes.
  6. Stir in both types of beans along with cooked Ditalini pasta until heated through.
  7. Serve hot and enjoy!
