  • 1 cup (120 g) all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup (150 g) light brown sugar
  • 1 large egg
  • 1 cup mashed bananas (about 2 medium bananas)
  • 2 teaspoons vanilla extract
  • ¾ cup (128 g) mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (177°C). Line an 8×8 inch pan with parchment paper.
  2. Melt the butter in a microwave-safe bowl and let it cool slightly.
  3. Whisk together flour, baking powder, and salt in a separate mixing bowl.
  4. Combine cooled butter and brown sugar in a large bowl; mix in the egg, mashed bananas, and vanilla until smooth.
  5. Gradually add dry ingredients to the wet mixture until just combined; fold in most of the chocolate chips.
  6. Pour batter into the prepared pan; sprinkle remaining chocolate chips on top.
  7. Bake for about 30 – 35 minutes until edges are firm and a toothpick comes out clean.
  8. Allow to cool before slicing into squares.
