  • 2 cups chopped English cucumber
  • 1 1/4 cups chopped Roma tomatoes
  • 1/4 cup chopped red onion
  • 3 Tbsp chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • 1 1/2 tsp minced garlic
  • 1 tsp Italian seasoning
  • Salt and freshly ground black pepper

Instructions

  1. Rinse and drain the chickpeas thoroughly.
  2. Chop the cucumber, dice the tomatoes, and finely chop the red onion and parsley.
  3. In a large bowl, combine chickpeas, cucumber, tomatoes, onion, and parsley.
  4. In a measuring cup, mix olive oil, lemon juice, garlic, Italian seasoning, salt, and pepper.
  5. Pour dressing over the salad mixture and toss until evenly coated.
