  • 4 strips Turkey Bacon, chopped
  • 1 small yellow onion, diced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 2 cups diced Yukon Gold potatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • Salt and pepper, to taste
  • 1 1/2 cups cooked shredded chicken
  • 1 1/2 cups corn, fresh, frozen, or canned
  • 1 cup half & half
  • 1/3 cup sour cream

Instructions

  1. In a large pot over medium heat, cook chopped turkey bacon until crispy. Set aside, leaving some fat in the pot.
  2. Sauté diced onion, chopped celery, and minced garlic in the pot until softened.
  3. Stir in flour to create a roux and gradually add warm chicken broth while stirring until smooth.
  4. Add diced potatoes, thyme, and parsley; simmer until potatoes are tender (about 15 minutes).
  5. Mix in shredded chicken and corn; cook for 5–7 minutes until heated through.
  6. Lower heat and gently stir in half & half and sour cream; simmer without boiling for a few more minutes.
  7. Serve hot and enjoy!
