  • 1 pound short-cut pasta
  • 8 oz white cheddar cheese, grated
  • 2 cups whole milk
  • 1 ½ tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cloves garlic, minced
  • 1 yellow onion, diced
  • 1 tsp dry mustard
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • ¼ cup grape juice
  • 1 tbsp Dijon mustard
  • 12 tbsp fresh thyme
  • 1 tsp crushed red pepper flakes

Instructions

  1. In a small bowl, mix dry mustard, thyme, oregano, salt, and pepper. Set aside.
  2. Cut chicken into strips or cubes; season with spice mixture. Heat olive oil in a large skillet over medium heat and cook chicken until browned; transfer to a plate.
  3. Boil salted water in a pot and cook pasta until al dente; drain.
  4. In the same skillet, melt butter over medium heat. Stir in flour and gradually add grape juice, garlic, onions, and Dijon mustard; cook until softened.
  5. Slowly pour in milk while stirring continuously until thickened. Add cheese until melted; stir in chicken and pasta.
