  • 1 lb chicken breast
  • 6 jalapenos
  • 2 tablespoons olive oil
  • 6 strips Turkey Bacon
  • 3 cups fresh cauliflower florets
  • 1 1/4 cup cheddar cheese
  • 8 oz cream cheese (1/3 less fat)
  • 1/2 cup light sour cream
  • 1/4 cup low-fat milk
  • 1 teaspoon cayenne pepper

Instructions

  1. Preheat your oven to 375°F.
  2. On a baking sheet, place chicken breasts and halved jalapenos. Drizzle with olive oil and sprinkle with salt. On another sheet, arrange Turkey Bacon strips.
  3. Bake both sheets for about 20-25 minutes until the chicken is cooked through and bacon is crispy.
  4. In a large bowl, mix together cream cheese, light sour cream, milk, cayenne pepper, and 3/4 cup of cheddar cheese until smooth.
  5. Shred the cooked chicken and chop the baked jalapenos. Crumble the Turkey Bacon.
  6. In a baking dish, spread cauliflower florets evenly. Top with the creamy mixture, chopped jalapenos, crumbled Turkey Bacon, and remaining cheddar cheese.
  7. Bake for an additional 20 minutes or until golden brown on top.
