- 1 small head of cauliflower
- 3/4 cup all-purpose flour (or chickpea flour for gluten-free)
- 3/4 cup unsweetened almond or soy milk
- 1/4 cup water
- 2 teaspoons garlic powder
- 2 teaspoons paprika powder
- 1 cup panko breadcrumbs (optional for gluten-free)
- 1 cup buffalo sauce
- 1 tablespoon olive oil
- 1/2 cup vegan mayonnaise
- 1 teaspoon dried dill
- 1 teaspoon dried parsley
- Preheat oven to 350°F (175°C). Cut cauliflower into uniform florets.
- In a bowl, whisk together flour, plant-based milk, water, garlic powder, paprika, salt, and pepper until smooth.
- Dip each floret into the batter and coat with panko breadcrumbs if desired.
- Lay coated florets on a parchment-lined baking sheet and bake for 25 minutes.
- Mix buffalo sauce with olive oil in a separate bowl. Once wings are baked, toss them in the sauce mixture.
- Return wings to the baking sheet and bake for another 20 minutes until crispy.
- For the dip, mix vegan mayonnaise with dill and parsley until well combined.
- Serve the wings hot with the ranch dip.
