  • 1 small head of cauliflower
  • 3/4 cup all-purpose flour (or chickpea flour for gluten-free)
  • 3/4 cup unsweetened almond or soy milk
  • 1/4 cup water
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika powder
  • 1 cup panko breadcrumbs (optional for gluten-free)
  • 1 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1/2 cup vegan mayonnaise
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley

Instructions

  1. Preheat oven to 350°F (175°C). Cut cauliflower into uniform florets.
  2. In a bowl, whisk together flour, plant-based milk, water, garlic powder, paprika, salt, and pepper until smooth.
  3. Dip each floret into the batter and coat with panko breadcrumbs if desired.
  4. Lay coated florets on a parchment-lined baking sheet and bake for 25 minutes.
  5. Mix buffalo sauce with olive oil in a separate bowl. Once wings are baked, toss them in the sauce mixture.
  6. Return wings to the baking sheet and bake for another 20 minutes until crispy.
  7. For the dip, mix vegan mayonnaise with dill and parsley until well combined.
  8. Serve the wings hot with the ranch dip.
