  • 1 1/2 cups chicken or vegetable broth
  • 12 ounces gluten-free pasta
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1/2 small yellow onion, finely diced
  • 1/2 large red pepper, thinly sliced
  • 1/2 large yellow or orange pepper, thinly sliced
  • 3 cloves of garlic, chopped
  • 2 tablespoons tomato paste
  • 3 tablespoons olive oil, divided
  • 1 1/2 teaspoons salt, plus more to taste
  • 1/2 teaspoon black pepper, plus more to taste
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon dried thyme
  • Pinch or two of cayenne (optional)
  • 2 tablespoons Cajun seasoning (optional)
  • Parsley (optional)

Instructions

  1. Soak cashews in boiled water for at least 30 minutes.
  2. Cook gluten-free pasta according to package instructions.
  3. Heat olive oil in a large skillet; cook seasoned chicken until browned.
  4. Sauté diced onion, bell peppers, and garlic until tender.
  5. Stir in tomato paste and remaining seasoning; remove from heat.
  6. Blend soaked cashews with broth until smooth for the sauce.
  7. Combine cooked pasta, chicken, and sauce in the skillet; heat through while adjusting consistency with reserved pasta water.
