  • 3 Tbsp unsalted butter (or coconut oil for vegan)
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 2 tsp freshly grated ginger
  • 2 cups vegetable broth
  • 1/2 cup full-fat canned coconut milk
  • 2 Tbsp fresh lemon juice
  • 2 tsp corn starch
  • 1/2 tsp ground cumin
  • 1 tsp ground turmeric (divided)
  • 3 tsp garam masala (divided)
  • 1 1/2 tsp salt (divided)
  • 2 Tbsp olive oil (divided)
  • 2 Tbsp tomato paste
  • 1 tsp paprika
  • 1/4 tsp ground cinnamon
  • Pinch of cayenne pepper (optional)
  • Basmati rice for serving
  • Fresh cilantro for garnish

Instructions

  1. In a mixing bowl, combine lemon juice, corn starch, cumin, turmeric, garam masala, and salt.
  2. Heat olive oil in a large skillet over medium-high heat. Cook cauliflower until browned and slightly softened (about 7-8 minutes), then toss with the spice mixture.
  3. In the same skillet, melt butter and sauté onions until translucent. Add garlic and ginger; cook until fragrant.
  4. Stir in tomato paste and spices; then add tomato sauce and vegetable broth. Bring to a boil before reducing to simmer.
  5. Mix in coconut milk and return cauliflower to the skillet. Simmer uncovered until sauce thickens (about 15 minutes).
  6. Serve garnished with cilantro over basmati rice.
