  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • ¾ teaspoon fine sea salt
  • ½ cup water
  • 1 tbsp apple cider or white vinegar
  • 1 whole egg (whisked)
  • 23 tbsp Turbinado sugar (optional)

Instructions

  1. Prepare the crust by mixing cold butter with flour and salt until crumbly. Add water and vinegar to form dough, divide into discs, wrap in plastic, and chill for at least one hour.
  2. In a saucepan over medium heat, melt the butter until golden brown; allow to cool slightly before adding to dough.
  3. Combine sliced peaches, quartered strawberries, sugar, cornstarch, lemon juice, and salt in a bowl; toss gently.
  4. Preheat oven to 375°F (190°C). Roll out one disc of dough to fit your baking dish and fill it with the fruit mixture.
  5. Roll out the second disc over the filling, cut slits on top for steam to escape, sprinkle with Turbinado sugar if desired.
  6. Bake for about 70 minutes or until the crust is golden brown and filling bubbles.
