  • 1 lb chopped cauliflower
  • 8 slices chopped turkey bacon
  • 1 pint halved grape tomatoes
  • Olive oil
  • 2 sliced leeks
  • 2 tbsp dill pickle relish
  • 1/2 cup keto mayonnaise
  • 2 tbsp mustard
  • 4 sliced green onions
  • Pink salt
  • Cracked black pepper

Instructions

  1. Boil the chopped cauliflower in salted water for about 7 minutes until tender. Drain and cool.
  2. Preheat your oven to 375°F (190°C). Roast halved tomatoes drizzled with olive oil for 20 to 30 minutes until slightly slumped.
  3. Cook turkey bacon in a skillet until crispy; reserve some fat.
  4. Sauté rinsed leeks in reserved turkey bacon fat until translucent; set aside to cool.
  5. In a mixing bowl, combine dill pickle relish, mustard, mayonnaise, pink salt, and cracked black pepper.
  6. Add cooled cauliflower, green onions, turkey bacon, leeks, and roasted tomatoes; toss gently.
