  • 56 medium sweet potatoes (peeled & cut into thin medallions)
  • ¼ cup unsalted butter (or plant-based margarine)
  • ¼ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F.
  2. Peel sweet potatoes and slice into thin medallions. Arrange in a baking dish.
  3. In a medium saucepan, combine butter, brown sugar, water, spices, and salt. Heat over medium until melted and smooth.
  4. Brush ¾ of the sauce over the sweet potato medallions. Cover with foil and bake for 45-50 minutes.
  5. Remove foil, drizzle remaining sauce over potatoes, then sprinkle with pecans and marshmallows.
  6. Switch to broil mode for 1-2 minutes until marshmallows are toasted.
  7. Allow to cool for 10-15 minutes before serving.
