  • 1 cup long grain white rice
  • 2 ½ cups chicken broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup frozen peas
  • 1 cup sliced carrots
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional: chopped parsley or chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant.
  3. In a large mixing bowl, combine uncooked rice, chicken broth, milk, salt, pepper, and sautéed garlic.
  4. Gently fold in the shredded chicken, peas, carrots, and half of the cheese.
  5. Transfer to the baking dish and top with remaining cheese.
  6. Cover with foil and bake for 45–50 minutes.
  7. Uncover and broil for an additional 5–10 minutes if you desire a golden cheese crust.
  8. Let rest for 5–10 minutes before serving; garnish with fresh herbs.
