  • 2 tablespoons brown sugar
  • 2 teaspoons smoked paprika
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon kosher salt (more for a larger filet)
  • 2 tablespoons olive oil
  • 2 mangoes, diced
  • 1 avocado, diced
  • 1/4 cup minced cilantro
  • 1/4 cup minced red onion
  • 1/2 jalapeño, minced (optional, to taste)
  • 1 teaspoon honey
  • 2 tablespoons lime juice + 1 teaspoon lime zest
  • salt to taste
  • 1 1/2 cups of rice

Instructions

  1. In a mixing bowl, combine diced mango, avocado, cilantro, red onion, jalapeño (if using), honey, lime juice, lime zest, and salt. Toss gently and set aside.
  2. Cook rice according to package instructions.
  3. Preheat your oven to 475°F (or broil at 500°F). Line a baking sheet with foil.
  4. Mix brown sugar, smoked paprika, onion powder, garlic powder, chili powder, kosher salt, and olive oil in a small bowl until combined.
  5. Place salmon skin-side down on the baking sheet and spread the spice mixture evenly over the top.
  6. Bake for 6-12 minutes based on thickness until cooked through.
  7. To serve, scoop rice into bowls topped with flaked salmon and generous spoonfuls of salsa.
