  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/3 cup apple cider
  • 1/3 cup fresh apple, peeled and grated

Instructions

  1. Preheat your oven to 325°F and line a 9 x 5 loaf pan with parchment paper.
  2. In a stand mixer, cream together unsalted butter, granulated sugar, and light brown sugar until fluffy (about 3 minutes).
  3. Add eggs one at a time, mixing well after each addition along with the vanilla extract.
  4. In another bowl, whisk together all-purpose flour, baking powder, salt, and spices.
  5. Gradually mix the dry ingredients into the butter mixture, alternating with apple cider.
  6. Gently fold in freshly grated apples.
  7. Pour the batter into the prepared loaf pan and bake for 55 to 60 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for 15 minutes before transferring to a wire rack.
