  • 2 apples (peeled and diced)
  • 2 cups all-purpose flour

  • 1 tbsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp nutmeg

  • 2 eggs
  • ½ cup milk
  • 2 tbsp melted butter
  • Oil for frying

Instructions

  1. In a saucepan, heat the apple cider over medium heat until reduced to about ¼ cup.
  2. Mix flour, sugar, baking powder, cinnamon, nutmeg, and salt in a bowl.
  3. In another bowl, whisk together eggs, milk, reduced cider, and melted butter.
  4. Combine wet ingredients with dry ingredients until just mixed; fold in diced apples.
  5. Heat oil to 350°F (175°C) in a frying pan or deep fryer. Drop spoonfuls of batter into the hot oil and fry until golden brown (about 2-3 minutes per side).
  6. Drain on paper towels and dust with cinnamon sugar while warm.
