  • 1 large egg yolk (room temperature)

  • 2 teaspoons apple pie spice or pumpkin spice
  • 1 teaspoon cornstarch
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 4 tablespoons unsalted butter, melted (for cinnamon sugar coating)
  • 2 tablespoons apple cider (not reduced, for cinnamon sugar coating)
  • ¾ cup granulated sugar (for cinnamon sugar coating)
  • 2 teaspoons ground cinnamon (for cinnamon sugar coating)
  • 1 cup powdered sugar (for glaze)
  • ½ teaspoon vanilla extract (for glaze)
  • 12 tablespoons apple cider (not reduced, for glaze)

Instructions

  1. Reduce apple cider in a saucepan over medium heat until it becomes ¼ cup (about 15–20 minutes). Cool to room temperature.
  2. Brown the butter in a saucepan over low heat until golden brown; let cool.
  3. In a bowl, whisk together flour, baking powder, baking soda, cornstarch, spices, and salt.
  4. In a large bowl, mix cooled butter with sugars until smooth. Add egg, reduced cider, and vanilla; mix well.
  5. Gradually incorporate dry ingredients into wet mixture until just combined; let rest while preheating oven to 375°F (190°C).
  6. Scoop dough onto parchment-lined baking sheets and bake for 9–11 minutes until edges are set.
  7. Cool on sheets before transferring to racks.
  8. Prepare cinnamon sugar coating by whisking melted butter with apple cider, and mixing granulated sugar with ground cinnamon.
  9. Brush one side of each cookie with apple cider butter. Immediately press that side into cinnamon sugar.
  10. Drizzle glaze made from whisking together powdered sugar, vanilla extract, and apple cider over cooled cookies.
