  • 2/3 cup gluten-free all-purpose flour
  • 2/3 cup plain non-dairy milk (almond preferred)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 3/4 cup plain gluten-free breadcrumbs
  • 1 tablespoon oil
  • 5 cloves garlic (minced)
  • 1 teaspoon fresh grated ginger
  • 1/3 cup low sodium soy sauce or tamari
  • 1/4 cup maple syrup
  • 2 tablespoons water or vegetable broth
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 2 tablespoons gochujang
  • 12 teaspoons sriracha
  • 1 teaspoon cornstarch
  • 1 teaspoon water

Instructions

  1. Cut the cauliflower into small, even florets.
  2. In a large mixing bowl, whisk together the gluten-free flour, non-dairy milk, garlic powder, and salt until smooth.
  3. Coat the cauliflower florets in the batter, then toss in breadcrumbs until evenly coated.
  4. Preheat the air fryer to 370°F (190°C).
  5. Cook half of the coated cauliflower for 10-13 minutes until crispy.
  6. Meanwhile, prepare the sauce: sauté garlic in oil, add grated ginger and remaining sauce ingredients, whisking until smooth.
  7. Thicken the sauce with a mixture of cornstarch and water.
  8. Toss cooked wings in the sauce before serving.
