  • 3/4 cup chopped cucumber
  • 2/3 cup sliced cherry tomatoes
  • 1/2 cup chopped red bell pepper
  • 1/3 cup sliced kalamata olives
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red apple vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. In a large mixing bowl, drain and rinse two cans of chickpeas. Add chopped cucumber, sliced cherry tomatoes, chopped red bell pepper, sliced kalamata olives, chopped red onion, crumbled feta cheese (if using), and fresh parsley.
  2. In a mason jar, combine 1/4 cup of extra virgin olive oil, 1/4 cup of red apple vinegar, 1 tablespoon of Dijon mustard, 1 teaspoon of oregano, 1/2 teaspoon of garlic powder, salt, and pepper. Secure the lid tightly and shake until well mixed.
  3. Pour the dressing over the salad ingredients in the bowl and gently toss until everything is evenly coated.
  4. Serve immediately or refrigerate for 30 minutes to enhance flavors.
